A chilled spring/summer creamy avocado soup made with just a few ingredients and done in just a few minutes .

Give this recipe a try and I promise you'll be wanting even more .
2 ripe avocados
2 sprig of parsley
2 sprigs of fresh basil
2 handfuls of arugula or mixture of lettuces
The juice of 1 Lemon
2 cm of peeled ginger root
2 -3tablespoons extra virgin olive oil
1 tsp salt
freshly ground black pepper, to taste
3-4 glasses of water (depending on the thickness you desire )
Put all the ingredients in the blender jar and blend for a few minutes until it forms a pure homogeneous. Add water little by little to give the texture you want .
Check salt and pepper.
Serve cold and/or sprinkles of sea salt pistachios , red radish and greens .
